CRUSTELIO Starter Guide
Ingredients:
- 100 grams of Rye flour
- 100 grams of wheat flour
- 200 grams of lukewarm water (filtered or boiled)
Directions:
-
Prepare the starter jar:
Unpack the borosilicate glass from your CRUSTELIO Kit. Clean and dry it thoroughly – it's ready for your sourdough starter. -
Attach temperature tape:
Attach the enclosed temperature tape to the outside of the jar at mid-height. It will show you whether the fermentation temperature (ideally 24–26 °C) has been reached. -
Mix ingredients:
Use the included spatula to combine 100g of Rye flour and 100g of wheat flour in the jar. Pour in 200g of lukewarm water and stir until the mixture reaches a smooth, even consistency. -
Cover for fermentation:
Cover the glass with the breathable fabric cover .
Important: Do not use the wooden lid during fermentation – the fabric allows air circulation, which is necessary for the sourdough.
Secure the fabric with the elastic band featuring the days of the week. The non-slip silicone base ensures stability while stirring. -
Daily feeding (for 5–7 days):
Every day:
-
Remove half of the starter (about half a cup)
-
Add 100 g of flour Rye and 100 g of lukewarm water
-
Stir well
-
Cover again with the fabric cover
-
-
Track progress:
Use the enclosed stickers and the white pen to document the fermentation process—e.g., date, time, and observations. -
Observe your starter:
Over the next 5–7 days, your starter will develop bubbles, volume, and a slightly sour aroma. Ensure a warm environment (24–26°C) is maintained for optimal fermentation. -
Ready for use & storage:
If your starter doubles in size within 4–8 hours of feeding , it's ready to bake!
If you don't bake daily, put it in the refrigerator.
Now you can use the wooden lid to seal the jar airtight.
Tip: Feed once before the next use and let it stand at room temperature for 1-2 hours.
